What's behind the bite?

     Food will always give warmth to our hearts. It quenches the famishing feeling, and helps the tummy feel sufficed. I have always wandered and wondered what food I'll consider as my favorite. 


      Going home, I felt more starving than I could have ever imagined. But, there in the table lies a bowl with its appetizing steam crawling towards my nose. With its sour nature, savory kick, and the variety of ingredients dressed along the sunkissed-like broth; my tummy growled.


     Sinigang's legacy amongst Filipino taste buds remained unshakable. Upon tasting the sour broth, the dish's flavors popped in my mouth. With versatile souring agents that are usually guava and tamarind or "sampalok", it only made me much more giddy of having a bite. Despite the tangy and unique flavor, Sinigang felt like a harmonious moment for me to have my mouth watered with anticipation of having a spoonful of more. 


     Was it my family genes acting up when I say I love Sinigang? Or was it because my mom's cravings when she was carrying me inside her tummy was anything sour? However, none of these answers touched how my passion for food sparked. 

 

     It is when later on, as I started to age my impeccable taste has been always a seeker of her favorite. However, this time, I wasn't looking for a menu that would help me feed my empty heart and stomach out of curiosity. Exhausted for battling for my dreams, I walked towards the very same dining table I grew up with. The inviting aroma swooned its way towards my nose. As I taste the familiar dish, I unveiled the mystery to finding my favorite. Truly, there's nothing to compare with my mom's Sinigang. It will always taste different. But never too different from the home I am found.
